Ingredients

1 container of J’s Shotgun Spread
6 medium russet potatoes - washed and dried
3/4 cup cooked bacon - chopped
2 tablespoons butter
1/4 cup green onion - chopped
1/2 teaspoon salt
1/4 teaspoon fresh ground pepper
Drizzle of canola oil
Kosher salt to taste

Chef's Tip

You can replace canola with olive oil as an alternative. Try inserting a fork into the potato to check for doneness. If the fork can go all the way in and slide back out easily they are done! If you like fluffy potato stuffing, add a bit of cream and beat the potatoes with a hand mixer.

Instructions

You've dipped your toes into the J’s Shotgun Spread pool with garlic bread, and now it's time to dive deeper. These loaded potatoes are like a backyard party in every bite. Let's go!

  1. Crank your oven up to 400°F.

  2. Give your potatoes a good drizzle of canola oil and a sprinkle of kosher salt.

  3. Send those spuds to the oven's center rack for about an hour. You'll know they're ready when a fork goes through them like butter.

  4. Once done, let the potatoes chill on a baking rack until you can handle them without screaming.

  5. Slice an oval shape on each potato's skin and pop that piece off.

  6. Get scooping! Hollow out the insides and toss them into a mixing bowl.

  7. Drop in some butter and mash until you reach potato nirvana.

  8. In goes the J’s Shotgun Spread, bacon, salt, and pepper. Give it a good mix. Taste test and adjust as needed.

  9. Spoon that glorious filling back into your hollowed-out potato skins. But don't cram it; you want a nice mound.

  10. Set your oven-proof dish, now filled with future deliciousness, into a 350°F oven for 15 minutes.

  11. Sprinkle with chopped green onions right before you serve them up.
